Hike 365’s BARK BARS!
Here is an amazingly nutritious, superfood dense trail treat that is sure to leave your friends licking their fingers and asking for more.
Taking 15 minutes or less to whip together, plus min 30 minutes freezer time, this is a quick, easy and delicious snack that’s great for gluten + dairy sensitive friends.
What’s even better is that it is really, really good for you! Raw cacao is actually the nut from which real chocolate comes from and it is loaded with minerals and antioxidants. Some cultures have even regarded cacao has a medicine and more valuable than gold. Since it tastes bitter on its own, we add honey, which is another superfood according to David Wolfe. Excellent for digestion, honey contains a high content of probiotics and enzymes. Coconut products, since they are laden with healthy fats and immune boosters, are also little miracle workers that help our high-functioning, healthy bodies perform optimally.
What you’ll need:
2 cups coconut flakes
1/2 cup oats (optional)
1/3 cup raw cacao powder
1/3 cup chia seeds
1/3 cup raisins (optional)
1/3 cup coconut oil
2 tbsp. raw unpasteurized honey
1 capful vanilla extract
1/2 tsp. salt (optional)
2 tbsp. of hemp seeds (optional)
First, set aside a large glass or metal baking sheet that is lined with parchment paper + a large flat-back spoon so it will be easy to smooth out mixture into a 1cm thick bark.
In a big bowl, evenly mix all of the dry ingredients together. While you’re doing that, warm up your coconut oil and honey until liquid. Then mix together, generously stirring until uniform throughout.
Now you use your large spoon to scoop, spread and press mixture into bark.
Pop in for 30 minutes freezer time, then cut into squares.
And there you have it! Chocolatey, yummy goodness that leaves you feeling fantastically recharged and energized.
Keep your bars in the freezer when not eating, if there are any left! 😉
